Mugwort Bread
Artemisia Bread
Ingredients:
- 50g Artemisia leaves
- 600g high-gluten flour
- 2 eggs
- 7g dry yeast
- 70g fine sugar
- 5g salt
- 250g water
- 60g butter
- 250g milk
Instructions:
- Prepare Artemisia Juice: Boil the Artemisia leaves in water. For vibrant color, add a few drops of olive oil, vinegar, or lemon juice during boiling. Adding vinegar or lemon helps preserve more vitamins. Transfer the blanched Artemisia into a blender, add milk, and blend until it becomes juice.
- Dough Preparation: Place all ingredients, except butter, in a bread maker. Mix for 10 minutes, then add the butter and continue mixing for another 40 minutes until the first fermentation is complete.
- Shaping: Divide the dough into three equal parts. Deflate, round, and let it rest for 30 minutes. Cover the top with plastic wrap. Roll and flatten the dough, let it rest for 10 minutes, then roll it again and place it in a toast box for the second fermentation until it is 80% full.
- Baking: Preheat the oven to 220°C. Cover and bake for 40 minutes. Uncover and bake at 170°C for about 35 minutes.
