Ingredients
- Young shoots of mugwort (Artemisia argyi)
- Flour
Preparation Method
- Wash the fresh and tender mugwort, blanch it in boiling water, and then crush it to extract the juice.
- Mix the mugwort juice with flour to form a dough. Roll out the dough into thin sheets and cut it into long noodles. Boil the noodles until cooked, then rinse them in cold water. Serve with a tomato and egg sauce, and optionally add a seasoning of chili oil, minced garlic, and chili for extra flavor.

Mugwort has various health benefits, including regulating qi and blood, dispelling cold and dampness, warming the meridians, stopping bleeding, relieving pain, and stabilizing pregnancy.
